When the Michelin Bib Gourmand-honored team behind Cesarina decided to open a second concept, they named it after co-founder Niccolò Angius's 95-year-old great grandmother and hired Ignazio Tagliavia, former head pizza chef at Eataly Los Angeles, to run the kitchen. Elvira brought authentic Roman pizza to Ocean Beach in November 2023, transforming the historic 1930s BO-beau building into a wood-fired temple of oval pinsa and pizza al taglio baked in rectangular steel pans. The Palermo native Tagliavia crafts each pizza with the kind of precision that comes from years inside Italy's most exacting kitchens. Ocean Beach has never seen Roman pizza executed at this level—crispy, airy, impossibly light dough that channels nonna's kitchen into every bite.
