Chef Stephen Carson bought the under-performing Regents Pizzeria in 2005, working without salary for nearly two years to transform it into a La Jolla institution. When Stephen passed in 2011 after battling cancer, his legacy lived on: bold flavors, authentic menu items, personal service, and a sometimes irreverent attitude that defines the restaurant today. The space exploded from 1,100 square feet with 32 seats to 4,100 square feet seating 150, adding a beer garden patio and 32 craft beer taps with cicerone-certified bartenders. Pizza Today named it a 2019 Hot 100 Independent Pizzeria for staggering sales. Stone-deck ovens imported from Silea, Italy bake both authentic New York thin-crust and Chicago deep-dish pizzas—whole or by the slice. Try the Regents Signature: grilled chicken, jalapeños, artichoke hearts, sun-dried tomatoes, feta on garlic cheese sauce. Near UTC mall, buzzing with families and UCSD students.
