Sam Fox founded North Italia in Scottsdale back in 2002, building it into a modern Italian concept that eventually caught The Cheesecake Factory's attention—they acquired Fox Restaurant Concepts for nearly $400 million in 2019. The Fashion Valley location, which opened in late 2018 as San Diego's first, runs coal-fired ovens that cook pizzas in about twelve minutes, not the traditional Neapolitan ninety seconds, achieving a golden-brown, slightly puffy crust with bubbly toppings. Their dough gets a six-hour fermentation using a blend of powder-fine 00 flour and rye flour, lending depth you won't find in most chain operations. The Bolognese remains their house specialty, while the Hot Honey & Smoked Prosciutto pizza consistently earns recommendations. With an 8,500-square-foot space seating 295 guests between the bright dining room and dog-friendly patio, North Italia brings Sam Fox's eleven James Beard nominations to Mission Valley's Fashion Valley Mall.
